Cru di Montepulciano, aged in tonneaux and barriques. Impenetrable red, velvety tannins, hints of wild sour cherries and violets. Remarkable intensity and persistence in the mouth.
Vilification: Cold pre-fermentation maceration for 3/5 days. Start of fermentation with indigenous yeasts. 15/20 days of maceration on the skins with daily pumping over. Malolactic fermentation carried out in wood.
Aging: For 30 months 50% in tonneaux / barriques and 50% in large barrels (27 hl); 6 months in the bottle.
Excellent paired with savory first courses such as pappardelle with wild boar or ripe beef, game and roasts. Perfect with aged cheeses, among which the “Marche di Fossa” cheese stands out.
Grapes 100% Montepulciano
Ruby red with evident and typical hints of wild sour cherries and delicate violets. The flavor of the same fruits explodes in the mouth, accompanying a full flavor of ensembles, including tannins. Pleasantly dry, warm and soft, it stands out for its intensity and persistence in an excellent balance.
