Method of cultivation: Organic
Harvest: Manual harvest of the grapes always in small crates. Depending on the vintage, the Chardonnay is harvested between the end of August and the beginning of September, while the Binacame is harvested between the end of September and the first weeks of October.
Vinification: The grapes checked and selected manually in the vineyard are inserted by gravity into the press, where the whole bunches are softly pressed. The must obtained is cold decanted. Alcoholic fermentation takes place at a controlled temperature in stainless steel barrels for about 15 days.
Refinement: After the alcoholic fermentation the wines obtained refine in a different way, the Bincame in French tonneaux, while the Chardonnay in terracotta amphora. Here they will remain there for at least 2 years, after which they proceed with assembly and then bottling. It will remain in the bottle for at least 6 months before release.
