Cultivation method: Organic
Harvest: Strictly by hand with the help of small boxes, essential for an optimal selection of the grapes in the vineyard. The harvest takes place between the end of September and the first weeks of October.
Vinification: Soft pressing of the bunches and cold static decantation. The must obtained will ferment in stainless steel tanks at a controlled temperature.
Refinement: After the alcoholic fermentation the wine obtained is divided into two different types of refinement; 80% in stainless steel and 20% in French tonneaux. Here it will remain on the fine lees for at least 18 months. In the bottle at least 2 months before release.
Serving temperature: 8-10 °C
