Acacia honey is one of the most difficult honeys to produce, considering that its brief flowering takes place in the month of May, a period in which the rains and the return of low temperatures can be an obstacle.
Its color varies from straw yellow to amber.
Acacia honey is all the clearer and clearer the purer it is. This purity allows it to remain liquid, therefore not to crystallize.
Its perfume is flowery and gentle, the taste sweet and delicate: characteristics that allow it to be excellent in cold preparations in which it does not dominate the other flavors.
