This type of garlic from the Liliacea family is the wild version of the common garlic. It is a spontaneous edible medicinal plant rich in numerous properties such as lowering the cholesterol level, antibiotic and anti fungal, and purifying the blood. It also contains a good quantity of vitamins and minerals, which is why the bears, hence the name, stockpile it upon awakening from hibernation, to recharge.
It grows spontaneously on the central Apennines mountains of Italy where it is collected and immediately processed.
It's taste is more delicate and delicious than common garlic, reminiscent of chives. It gives dishes the scent of classic garlic without creating the same unwanted effects as common garlic.
